Marmara Pork Lettuce Wraps

If you're in Austin, TX you have got to check out the Farmer's Market at Mueller. It's a foodie's dream, especially this time of year. I picked up some amazing Boston leaf lettuce which is perfect for wraps and packed with flavor! I threw together a quick and refreshing spring dinner using the Boston lettuce as the base. You won't believe how easy it is to make a delicious meal with just a few fresh ingredients from the market. Get inspired and go support your local farmers! 

Ingredients:

  • Pork Tenderloin 1/2 inch thick
  • 1 tsp. salt
  • 1 tbsp marmara spice blend
  • A small bowl of flour
  • Boston leaf lettuce
  • Half a cucumber sliced thinly
  • Red onion thinly sliced ( about 10 slices )
  • Tomato chopped
  • 1 tbsp of apple cider vinger
  • 1 tbsp of evoo
  • 2 or 3 tbsp feta cheese
  • 2 or 3 tbsp sour cream or whole fat yogurt
  • 1 tsp capers or diced pickles

Optional

  • roasted salted pepitas for crunch

Directions:

Pork tenderloin sliced about 1/2 inch thick and toss in flour, teaspoon of salt, and tablespoon of Marmara.

Fry in skillet for a couple of minutes depending on thickness. Test. Once oil is hot, fry a piece for two minutes then salt and sprinkle a little more Marmara and let it rest 4-5 minutes, cut open, it should not be pink.

Cucumber tomato salad.

Mandolin half a cucumber, about ten super thin slices of onion, I used red and chop a tomato. Add a glug of your preferred vinegar (I used ACV), glug of evoo and salt and pepper. Plus I had some leftover cilantro so I chopped that up and threw it in. Put in fridge to marinate.

Feta sauce

Couple tablespoons of feta cheese and a couple tablespoons of sour cream or whole fat yogurt and teaspoon of capers to taste. It doesn't have to be capers, you could dice some pickles up, just need some tang.

Optional Crunch

I like texture variations, so I always keep a variety of crunchy toppers around. For this I used roasted salted pepitas. Cheap, tasty, crunchy.

Serving Instructions:

Begin with a vibrant leaf of Boston lettuce, layer on crispy fried pork and refreshing cucumber salad, drizzle with feta sauce, and sprinkle with zesty capers. Served alongside golden-brown fried potatoes that are sure to satisfy any carb cravings.
